Fermentation and maceration in conditions of controlled temperature (15-18 °C), for 30 days. Evolution in the yeasts at low temperature until spring. Slow re-fermentation in large containers for 40/50 days at 12/14 °C, and stop on yeasts for 30 days.
Great as aperitive, it combines with delicate fish based plates. Perfect with oysters and appetizers based on seafood.
