vinification technique

All the initial operations, soft pressing and natural decantation, take place at a constant temperature of 10- 12 °C in an oxygen-free environment, in order to preserve the must from oxidation. Fermentation takes place at a controlled temperature of 16-17 °C and lasts around 15-20 days.

tasting notes

Colour: soft straw-yellow with greenishtinges.
Nose: intense primary aroma with predominant notes of citrus and freshfruit.
Palate: lively, veryfresh and tasty, balanced, delicate and fine.

storage

Away from light, temperatures not above 12-15 °C .

serving

Talls lender glass, serving temperature 8-10 °C .

Excellentas an aperitif with seafooddishes and shellfish; to accompany sushi, sashimi and starters, light whitemeat and fishdishes.
